Here at The Winchester Bakery, we’re big fans of The Great British Bake Off. For cake week, here’s our recipe for an indulgent chocolate fudge cake which is sure to impress!

Ingredients:

For the cake

  • 175g margarine
  • 225g soft brown sugar
  • 200g caster sugar
  • 3 large free-range eggs
  • 1 tsp vanilla extract
  • 250g plain flour
  • 125g cocoa powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp fine salt
  • 375ml soured cream

For the frosting

  • 150g dark chocolate
  • 100g cocoa powder
  • 100ml boiled water
  • 225g softened unsalted butter
  • 6 tbsp icing sugar
  • Any decorations of your choice

Method:

  1. Preheat oven to 160C fan and grease and line 2 large cake tins with baking parchment
  2. Beat margarine and both sugars together until pale and fluffy
  3. In a separate bowl, beat together the eggs and vanilla extract
  4. While whisking, slowly pour the beaten eggs into the margarine mixture
  5. Sift the flour with 125g cocoa powder, the baking powder and salt
  6. Stir a large spoonful into the eggs and margarine mix, followed by a large spoonful of soured cream
  7. Repeat step 6 until all the flour and soured cream are incorporated
  8. Continue beating until you have a smooth batter, then divide it equally between the tins
  9. Bake for 25-30 minutes until the cakes have risen and firm to touch
  10. Leave to cool in the tins before transferring to a wire rack to cool completely
  11. For the frosting, melt the dark chocolate in a heatproof bowl, stirring until smooth, then set aside to cool
  12. In another bowl mix 100g cocoa powder with the boiled water to make a thick paste
  13. In a large bowl, beat the butter until soft, then add the icing sugar and whisk until pale and fluffy
  14. Add the melted chocolate and cocoa paste, then beat everything together until smooth
  15. Assemble the cake by spreading one sponge with 1/2 of the frosting, then place the second sponge on top and spread with the remaining frosting
  16. Add any additional decorations you like, and allow the frosting set before serving
